Check your child's backpack for conversation starters
If all you hear from your child about school is that it was "fine" or "boring," look in your child's schoolbag. The papers inside are great conversation starters. Kids who won't respond to general questions like "How was school?" will often answer specific ones like "How did you use this map in class?" If you find artwork in the bag, ask what your child was thinking while making it. Vocabulary words? Ask which are easy and which are hard.
